Vegan BBQ Blue Oyster Nachos

A bit about Blue Oyster Mushrooms

Blue Oyster Mushrooms have a firm and meaty texture, especially when cooked. This texture can make them a satisfying alternative in recipes that traditionally feature meat, providing a similar mouthfeel. Blue Oyster mushrooms are also known for their ability to absorb flavors during cooking, making them versatile and allowing  them to take on the taste of seasonings and marinades, providing a savory and satisfying experience.

 

The Recipe

Ingredients

 

BBQ Oyster Mushrooms

  • 2 lbs Blue Oyster Mushrooms 
  • 2 Tbsp Olive Oil
  • Salt and pepper to taste
  • BBQ Sauce (Sweet Baby Rays)

Cashew Cream

  • 1 Cup raw cashews
  • ¾ Cup oat milk (or other plant milk)
  • 1 Tbsp Lemon Juice
  • Dash of Salt

Beans

  • 1 Can black beans 
  • 1 Can pinto beans
  • 1 packet taco seasoning
  • 1 Cup Vegetable broth

Nachos

  • Beans (pinto, black or both)
  • 1 bunch cilantro chopped
  • 1 red onion diced
  • 3 tomatoes diced

    Preparation

    1. Preheat oven to 400
    2. Shred mushrooms. Rinse and dry mushrooms and shred using a fork. Place on a parchment-lined baking sheet, making sure the mushrooms are spread out enough to dry. Place in the oven for 15 minutes.
    3. Prepare  Beans. Rinse beans in a strainer and heat on the stove in a saucepan. Add taco seasoning and vegetable broth and bring to a boil. Then reduce heat to simmer and let simmer while you prepare your toppings 
    4. Toppings. Chop cilantro, red onion and tomato and set aside
    5. Cashew Cream. Place all ingredients in a high speed blender and blend until smooth. Note: If you don’t have a high speed blender you will need to soak the cashews in water for ~4 hours.
    6. BBQ Sauce. Take the mushrooms out and set the oven to 475. While the oven is heating, coat mushrooms with BBQ sauce. Place back in the oven and cook for another 8 minutes making sure they don’t burn.
    7. Melt Cheese. Once the mushrooms are done, reduce oven heat to 375. Place tortilla chips on a parchment paper-lined baking sheet, cover with favorite vegan cheese shreds, heated beans, and put oysters on top. Place in the oven until the cheese has melted.
    8. Assemble. Use a spatula to scoop a ¼ of the melty nachos on a plate or large bowl. Cover with cilantro, onion, tomato and cashew cream.

      Pro Tip

      • Use low-sodium or no salt beans to avoid too much salt. Or make from dried beans in an Instapot.
